Rename `jsc` EWS bubble shortname to `jsc-x86-64`

Reviewed by Ryan Haddad.
It's unclear that the current `jsc` bubble means X86_64 since that's no
longer the primary macOS architecture. We should rename it to make the
architecture clear.
