[GTK][WPE] Update dependency package lists

Reviewed by Adrian Perez de Castro.
The package lists used by `Tools/{glib,gtk,wpe}/install-dependencies`
have not been kept up to date for a while. On current distributions the
script either fails outright or installs packages that leave the build
broken.
Update the package lists to reflect the current requirements.
Tested on:
- Ubuntu 26.04
- Fedora 44
- Arch Linux 20260927
