Are there any examples of non-HTML wo pages? I’d like to return a page of type TEXT/TEXT – ie, non-encoded.

WO is just a template engine attached to an object persistence engine and an HTTP pipe. It does not really care what it returns, HTML, XML, plist format, text, or pure non-sense. If you don't want HTML tags, then don't use links and things that make HTML tags.

I think what you really want to ask is, "How can I change the Content- Type header of the HTTP response?"

I wish there was a good searchable repository of WO examples with explanations.

Search for 'content-type' on www.wodev.com
