EOModeler use JVM 1.1.8 so make sure postgres.jar run with this.
I use normally two different JDBC drivers.
The one for EOModeler in C:\Apple\Library\Java and one in the extension dir.

I added the jar file explicitly within this plist file now.
Still no luck. I still get the same error message.

Within the error message it now even mentions the new addition within the classpath....C:/Apple/Library/Java/Extensions/postgresql.jar in the end... and that is where the file also resides.

On Windows you need to add the jar's to 
%NEXT_ROOT%\Library\Java\JavaConfig.plist.
But, I have never tried postgresql under Windows.
