IIRC, in addition to the settings in Java Preferences, the system is looking at the architectures in the launch wrapper to determine which JVM to use. That's probably why the system is picking the right JVM for you. The details were discussed at WWDC this year in session 405, about 10 minutes in. Apologies for the shameless plug of WWDC. ;-)
