I've gone from XServe to the Amazon EC2/S3 system this last year and I've had fantastic results.
A few of us are using installation scripts for the server that really put you in control of the configuration with confidence and power. There's a few wiki pages on it http://wiki.objectstyle.org/confluence/display/WO/Deploying+on+Amazon+EC2 Simon originally crafted a most-excellent deployment script system that gets all the stuff you'll need and sets it up on a new instance -- you run, then modify the scripts and continue to evolve them as you need and control whatever you want. works great.
