Ada, As long as your app is platform agnostic (i.e, not using JNI to call platform specific code etc), then you should have no problem moving to non OS X for deployment.
In fact after the demise of the Xserve, many folks in the community shifted their deployment to some form of linux distro. Many are deploying in the cloud or on commodity hardware in co-lo facilities. When we made the move, we had some native image resizing code we needed to revise, but other than that moving to Linode for deployment for us was pretty straightforward.
