  you could try this combination :
storeProperty (http://webtest.canoo.com/webtest/manual/storeProperty.html,
see "Inline text")
applied to pdf2TextFilter (
http://webtest.canoo.com/webtest/manual/pdfToTextFilter.html)

then some Groovy steps (http://webtest.canoo.com/webtest/manual/groovy.html)
to count the number of 'Submits' in your property.

I think it should work, but I'm not sure about the 'inline text' of
storeProperty : I don't know if it can store the result of another step
(pdfToTextFilter) in a property. You'll have to try it ; let us know if it
works ;) !

Another solution (an ugly one) would be to store your response when you
invoke/click/whateverelse your PDF (I mean saveresponse:true), then to
execute a groovy step which would open your PDF file, read and process the
data the way you want...
