self.response().setHeader('Content-Type:', 'text/xml')
should do the trick. All HTTP headers are manipulated via the Response.
You might also find it useful to create an abstract XMLPage class that
inherits Page and becomes the parent class of all your concrete XML pages.
Obviously, the set Content-Type: would go in there. I don't know if you
would come up with anything else...
