Zeph, I have had the same erratic frustrating problem as yours and it has taken me awhile to figure out the "fix". I won't go through the details of the trouble shooting but the problem was with the Ethernet connection at the PI. My fix was to wash the Ethernet connector on the PI (inside) with alcohol and a Q-tip, did several times, then polished the connectors with a dry Q-tip. This was my problem, but it could also be the cable or the connector at your router.
