There's little chance a pi3 can run three cameras well. I had to move my motioneyeos pi3 system monitoring a wifi camera to docker on a Intel NUC (which runs great). Even with just one camera, the pi3 was lagging 30 secs behind realtime video. The NUC is within a second of current running motioneyeos under Docker.
