Assuming that you only need an easyweather.dat file in the format described 
here

and only the fields in bold are used by cumulus then it should be easy 
enough to create such a data file just by creating the appropriate template 
called easyweather.dta.tmpl and letting weewx populate the fields.

Whilst you will no doubt need an appropriate number of commas to skip over 
the unused fields you will need to experiment to see if you need the raw  
data on the end of each record.
