the complete sensor hierarchy (for being registered in parallel to the same console) is: (right trumps left)
outdoor T/H: WH65/WS69 --> WS80 --> WS90 --> WH32
wind: WH65/WS69 --> WS68 --> WS80 --> WS90
rain: WH65/WS69 --> WH40 --> WS90 (where with the latter, with latest console firmware, a traditional rain gauge (WH65/WS69 or WH40) can be synoptically registered and displayed with the WS90 piezo rain)

Maybe we need to restructure the thread and do some housekeeping for being better readable 😉

In your case it is rather simple. What you call an older array similar to the HP2561 (station ! - the console has the same name 😮) is most likely the WH65/WS69 outdoor sensor array. In your console (assuming that a HP25x0 console) you can register both arrays - the WH65/WS69 and the WS80 array in parallel. As long as you don't have a WH40 rain gauge connected, the rain data from the WH65/WS69 rain gauge would be taken by the console. If you also have a WH40 rain gauge connected, the console would ignore the WH65/WS69 data and prefer the WH40 data.

On second thought, you saying that you are using the Ecowitt gateway driver, then your console is rather a GW1x00/GW2000/WH2650 or WN19x0. But the principle is the same - only that the registration for them happens via WS View Plus and not via the console display (HP25x0).

The WS80 T/H outdoor readings would also be preferred over the WH65/WS69 readings by the console.

Bottom line - you don't have to block anything - it's already done by the sensor hierarchy. You only need to connect both outdoor arrays to your console/hub/gateway.

I have an Ecowitt WS80 and an older Ecowitt array similar to an HP2561. I am only using this second device for rain measurements. I use the Ecowitt Gateway driver and used the WSView Plus app to set things up.

Is there a simple way to block all sensor output (apart from rain) in the HP2561 ensuring that I am receiving all other sensor output from the WS80? Testing the driver in direct mode, it is impossible to see from which device the data is coming from.
