That's an error in the Upgrade Guide. References should be in the plural. That is, it should be weewx.schemas.xxx
Thanks for spotting that. The Guide has been corrected. As for the original poster's issues: I don't think this is a problem. V5.1 will first try "schemas.wview_extended", and if it doesn't find the schema there, then it tries "weewx.schemas.wview_extended". You can see it doing this in the log.
