I just started again in a similar way, a mix of my old Davis VP2 plus some 
ecowitt sensors. Now running on a cheap ebay purchase, Dell Wyse 5070 - 
plenty of capacity. Feeds my website and Home Assistant (on separate 
boxes)  without issue.
