Daniel, Our Mailserver ist about 5 Years old and we are still using Exchange 5.5 on a NT4-Box. Having >3000 Mails/day passing this one server, it may last a while until you get an answer until you have to take action. A "normal" response time for that one server would be 30-40 sec. We are using WhatsUp to check also services and restart them if necessary.

I suppose if this is over a low bandwidth connection, the timeout might need to be slightly longer (a few seconds to allow for latency), but I cannot see a reason for it to be 3-6 times longer.
