if you want to stick with dropdownchoice you have to override appendOptionHtml(AppendingStringBuffer, V, int, String) and do the output of <option> tags yourself. i dont know if i would go that way, its not that nice but works.
another option is to use Select/SelectOption components to do the same, these give you full control over the markup that is generated because each <option> tag is a component.
