You can change the plus to some other text by editing MediaWiki:Addsection (the central Wikia uses "Post a comment" instead of +), but there's not yet a way to have it edit the talk page the other way round since when this feature was added to MediaWiki, the custom was always to add new messages at the end so they could be read chronologically. However, Wikia is supporting the development of Liquid Threads which does do it the way round the muppet wiki does it - with new messages at the top.
