I think most are online already at

And maybe sometime in the next few months they'll make their way to
commons. (I've asked about that relatively recently and there has been
relatively recent communication between the Wikimania team and the
vendor they're waiting on.)

However, your reasoning might be correct; I don't know much about
FOSDEM video besides that a lot is the same as DebConf video. (both in
terms of methods and equipment but also overlap in team members) The
DebConf method involves streaming and recording the stream for upload.
Files are then given a quick review to be sure there's no readily
apparent serious issues and are then available for download by the
general public. There is no editing done at all unless a major problem
is found, so no waiting for the editing process to finish.
