You can configure MediaWiki to use an external SMTP server, I wrote up a set of instructions on this a while back: http://snowulf.com/2011/08/30/configuring-mediawiki-to-use-external-smtp/
You can also take a look at the manual for $wgSMTP at http://www.mediawiki.org/wiki/Manual:$wgSMTP The other option is that when you create accounts, do not do it "By Email". Simply enter a random password (twice) and click create.
