I did say I was doing a lot of reading,
and yes I've got to that bit -
Seems that specifying a multi session disc causes the system to initiate 2 TOC 
areas - 1 for wot you wrote, and 1 for wot you want
to do next
And every time you do something other than close the disc, it records wot you 
did in the extra TOC it has already created - and sets
up another blank TOC area for your next action.

For those further interested in CD/DVD's
I've got past the bit where the dye specified in the disc information may not 
be correct,
and am into the bit about burn-proof and note
that the options you
may have on your drive
that the software may deign to use
to deal with the PC's failure to keep up with the drive when supplying data to 
be written to disc
may include

Pausing the write and then
Restarting a write process at (well near) the point it stopped

Slowing down the drive spin rate to allow the PC to try to keep up when it's 
loading the buffer
And possibly speeding up the write when the buffer is filled again

and the various read/write 'codec's and error recovery (or I give up on this 
disc) processes
