I did resolve my problem. The recent documents were showing, but I wanted more than 15 to display. You can increase the number either by editing the registry by hand, or by a tweak program called x-setup. It's very nice to have more. But it's nice also to know that you can really see the whole megillah through Run.

If using the XP Start menu, there is a box that must be checked before recent documents are shown on the menu. I think it is unchecked by default, so that may have caused the confusion.
I think there must be a registry key that controls how many recent documents are listed. I use the Classic Start menu, but switched momentarily to the XP Start menu to double-check what I was saying. Before doing that, there were 23 documents being shown, but after the switch and checking the box, it was trimmed back to 15, even after reverting to Classic. Weird.
BTW, in case you didn't already know it, you can click Run and type Recent and it will open a folder with dozens of recently accessed documents. Mine currently contains 149.
