which "everyone" can see in my headers...
I guess that is what I needed to change, but to what?
(I don't use OutLook because it makes it too hard to get to
the headers, and several other more important reasons...)

Change to Mime: none.
Note: This will only affect others who reply to your messages.
Nothing can be done about the lack of ">" when replying to
a message that was composed with OE's Mime:QP option.
