Thanks to Ken [in a private email] and I get a big "DUH" -- as it turns 
out, the 'file types' tab is only present when you run WMP10 as an 
administrator...   Somehow when I checked running-as-admin I missed the 
'extra' tab that appears.  Running in a limited account the tabs in the 
back row are Plugins, Privacy, Security, DVD, and Network.  When you run 
it as administrator [if you look more carefully than I did...sigh], 
there's a "file types" tab between Security and DVD... I just missed 
it...
