Ah, I'm dumb as a post. I turned it off, and then TURNED IT BACK ON. And couldn't figure out why the security tab wasn't there. I kept going to the Folder options and confirming "Yup, Simple File sharing was ON, so where's my security tab". SIGH. SFS is off, and now my security tabs are back.
