I have found that unchecking "Remember each folder's view settings" works
best when you want all folders to stay the way you initially set them this
way.

"Setup your folder the way you want it, go to Tools/Folder Options and
select
the View tab. Review all the option settings and change them to how you'd
like (recommend unchecking "Hide extensions for know file types" and check
"Remember each folder's view settings"). Finally click the "Apply to All
Folders" button at the top."
