What mAh rating would you recommend for these rechargeable batteries
to be used in devices with a voltage tolerance of no less than 1.2v?

Good idea but be careful with voltage sensitive/amp sensitive equipment.
Alkaline batteries or cells are 1.5 - 1.62v  NiMH are usually 1.2 - 1.4v
I have found some equipment switch off if voltages fall lower than 1.2v
