Actually SFS is safer (IF certain conditions are met, such as not sharing the WHOLE C drive or the critical folders) because the **ONLY** network log on allowed is the guest account. Admin or local user accounts can not be used for network log on. One can not get to the "admin shares" (C$) either.

SFS would be much safer if MS did NOT allow sharing the whole c drive or any critical folders. Right now only a warning is presented, but the share is permitted.

Don't present problems where there isn't any. If only you, your partner and a guest use this printer and you actually trust each other then use Simple File Sharing on the machines and make sure the computer connected to the printer is actually switched on.
