I know of no keyboard shortcut for inserting a table, I think you need to
use either   ribbons or menus depending on version of Word to navigate to
the insert Table dialogue where you can specify the format of the table.
In Word 2003 pressing the alt  key then a and then I will deliver you to the
insert table dialogue. I am trying still to avoid later version of Word but
I understand later versions of Word honour some of the previous Word
keystrokes so this may work.

As I understand it the long standing standard header shortcuts  which have
existed for a long time in Word are honoured in all versions of Word.
That is control alt 1 equals header style 1, control alt 2 equals header
style 2 etc.

Remember auto bulleting also. Typing an asterix at the beginning of a line
then space  and the first list item will initiate the automatic insertion of
a bullet after pressing the return key.

I now need to start working on documents in Office 2010 and Office 2013.  Am
I correct in saying that you use the control key as a modifier in order to
