Funny you should ask. This idea has been milling about in the heads of several Winkers. Ideally, I'll get some time to make it the default and come up with some defaults over the next couple of months. Please go ahead and open a Jira for this. I think it's a reasonable request, and that Wink really should consider Jackson as the default, especially considering the immediate compatibility that would give it with other JAX-RS platforms.
