One question that you may ask yourself here is what you are going to do with the information.  If you just want to have people come see you and tell you who they are, you could just implement MAC filtering and let them in or not.  Alternately, you could put in a simple WEP key and require that they ask you for it and change it weekly.

If you start collecting information on who goes where, then you may find yourself needing to maintain records for long periods to comply with some non-obvious regulation.  You may not really want to know this stuff - you may just want to attract people to eat and drink and let them use your WiFi as a "magnet" to get them to you.
