We have found that the success of VOIP over WiFi is directly related to the quality of the VOIP provider. Some providers have higher QOS built into their system and those have very good success. Others have tried shortcuts and those tend to have much more frequent problems. It really is like your network, if you build it right it works pretty well but if you take shortcuts they can come back to bite you.
