I think your problem is a linux config one, not Witango. perhaps you need to update your hosts file or whatever it is that would cause it to report itself as the server name "bart" "lisa" or whatever cartoon character it's named after to the server instead of 127.0.0.1

I'm going to run a couple quick tests on my linux witango box and I'll let you know how mine is setup and if it's reporting itself as 127.0.0.1 too.

Currently though I have no problems sending mail from my linux witango box.

This is not the case on Windows, and I have a very similar setup.
Changing the client shouldn't impact you in anyway, however I'm not sure
it will fix your problem, worth a shot though. You might want to try
setting the LISTENERADDRESS= and make sure that MAILADMIN= &
MAILDEFAULTFROM= are set to something (and not something that may
resolve to 127.0.0.1)
