I've seen similar effects when there is a mis-match in collation, normally there is a default for the table and if no collation is defined for the column in inherits from the table, but if the column got changed and the collation doesnt match then you can have issues.

I normally use utf8_general_ci

On some rows that I entered yesterday, the 5th column totals just fine, on others I entered today, I get nothing. This only seems to be the case on One table, the other tables seem to work fine where I am doing the same kind of query. Any ideas what might be going on here?
