After typing this out I figured out the answer. I'm submitting anyway since

Hello:
After reading the docs, reviewing the talk list, downloading the email
demonstration code and experimenting some I have a few questions regarding
the associated email tags. I am using Merak (IceWarp) mail server and have
included the header of a simple test email I used below.
My test code below allowed me to easily pull most of the fields noted.
<@assign request$maillist value="<@emailsession list
fields='Received,From,Subject,Date,Organization,MIME-version,Content-Type,X-
Mailer,Thread-Index,X-MimeOLE' sessionid='POP3 Session: <@userreference>'>">
However, I can't seem to pull Reply-To, To and Cc fields. In addition, the
"from" field only pulls "John Hotaling". I've manually modified the header
and have been able to pull various custom fields etc. The problem seems to
be related to the < > notation .. Well, the light just went off, it's an
encoding issue. I needed to display using
<@var request$maillist encoding="html">
