We've used the question before: When are you shipping? The reason is 
that if you shipped a product, then WiX changed to fix a bug or add a 
feature, that version of WiX might be incompatible in some way that 
would complicate or prevent servicing (e.g., patching). That's a real 
concern with WiX v3's "convenience" features (e.g., generation of stable 
short filenames). If we discovered that the approach was wrong for some 
reason, we might have to change it in a way that generated different 
short file names, which would make patching all but impossible.

Otherwise, I know of several teams at Microsoft using WiX v3 so the 
tools are basically stable for some pretty hefty projects.
