WiX cannot create Transform files. Yet. Rob? :-) You will need to use another tool to create the transform files. MSDN also has an article "Authoring Multiple Instances with Instance Transforms" (http://msdn2.microsoft.com/en-US/library/aa367797.aspx) which contains a list of what to actually include in the transforms and what the original .msi has to concider.
Unfortunally it's not just a switch as is in the old setup days (http://community.installshield.com/showthread.php?t=170406).
