White Chocolate-Key Lime Calypso Bars 
           Didi Fraioli

            Finalist in the 2002 Bake-Off� Contest  
     
            Ingredients: 
            1 (18-oz.) roll Pillsbury� Refrigerated Sugar Cookies 
            1 cup chopped shelled pistachios 
            1 cup coconut 
            1 1/2 cups white chocolate chunks or white vanilla chips 
            1 (14-oz.) can sweetened condensed milk (not evaporated) 
            1/2 cup Key lime juice, fresh lime juice or thawed frozen limeade 
concentrate 
            3 egg yolks 
            1 teaspoon oil 
     
      Prep Time: 20 Minutes (Ready in 3 Hours 5 Minutes) 
      Preparation Directions:  
      1. Heat oven to 350�F. Grease 13x9-inch pan. Break up cookie dough into 
large bowl. Add pistachios and coconut; mix well. With floured fingers, press 
dough mixture evenly in bottom of greased pan to form crust. Sprinkle 1 cup of 
the white chocolate chunks over dough; press lightly into dough. 
      2. Bake at 350�F. for 14 to 16 minutes or until light golden brown. 
Meanwhile, in medium bowl, combine condensed milk, lime juice and egg yolks; 
beat well. 
      3. Remove partially baked crust from oven. Pour milk mixture evenly over 
crust. 
      4. Return to oven; bake an additional 20 to 25 minutes or until filling 
is set. 
      5. In small microwave-safe bowl, combine remaining 1/2 cup white 
chocolate chunks and oil. Microwave on High for 45 seconds. Stir until smooth; 
if necessary, microwave an additional 15 seconds. Drizzle over warm bars. Cool 
1 hour. Refrigerate about 1 hour or until chilled. Cut into bars. Store in 
refrigerator.

      High Altitude Instructions (Above 3500 Feet): 
      Bake crust at 350�F. for 16 to 18 minutes. Continue as directed above.
