I make this several times during the winter, as it's my Son's favorite
Mexican dish.  It's a family tradition in our house for me to make
this every New Year's Eve. I add a red chili sauce to mine every
time.  Gives it more flavor.

POSOLE

2 lbs. Chili pork (cubed) or plain pork
1 package frozen hominy
2 onions (diced)
2 or 3 garlic cloves ( minced )
2 ½ quarts water or more

Cook hominy in water over medium heat until corn pops, approx. 2
hours. Add remaining ingredients and allow to simmer slowly until meat
is tender. (Approx. 2 hours) May need to add more water as cooking.
You may add a red chili sauce into the posole if desired for more
flavor.
