Steamed Vegetables with Barley


Ingredients:
1 cup Barley, Whole Hull-less
3-1/2 cups Water, cold
1 Red Onion, large, halved & cut into 1/4" slices
2 Turnips, large, peeled, cut into 1/2" julienne strips
2 Sweet Potatoes, peeled, cut into cubes
3 oz. Butter, melted
1 Garlic Clove, pressed
1/2 tsp Thyme
1 tsp Dried, crushed mint
1/2 tsp Sea Salt
1/4 tsp Pepper
3 Carrots, medium, peeled & cut into 1/4" ripple slices

In a covered sauce pan, bring barley and water to a boil. Reduce heat
and simmer with lid slightly ajar for 45-50 minutes.

Meanwhile, in a steamer, arrange onion, turnips, carrots and sweet
potatoes on steamer rack. Cover and steam for 15-20 minutes. Place on
a heated serving dish. Add the cooked barley overall.

In a bowl, combine melted butter, garlic, thyme, mint, salt and
pepper. Pour over vegetables and barley; gently combine and serve hot.

Yield: 4-5 servings
