Golden Apple Macaroni and Cheese Salad 1 c. shredded Swiss cheese 1 c. uncooked elbow macaroni, cooked and drained 2 large golden delicious apples lemon juice 1/2 c. diagonally sliced celery 1/4 c. chopped green pepper 1/4 c. chopped green onion 1 T. chopped pimento, well drained 1/3-1/2 c. mayonnaise 1/2 t. salt 1/2 t. dry mustard 1/8 t. thyme Core and chop apples, drizzle with lemon juice. Combine apples with cheese, macaroni, vegetables and pimento. Stir together dressing ingredients. Mix well. Combine dressing with salad mixture. Cover and chill 2-3 hours before serving.
