2 1/2 pounds alligator meat -- cubed and floured
3 cups cotton seed oil
3 cups white onions -- diced
1 cup celery -- diced
1/2 cup green bell pepper -- diced
1 pound margarine
1 tablespoon garlic powder
Salt and pepper -- to taste
1 1/2 cups tomato sauce
1 quart water
1/2 teaspoon paprika
Red pepper -- to taste
1/2 teaspoon cayenne pepper
Soak alligator meat in water for 1 to 2 minutes. Coat in flour and fry in
cotton seed oil at 350 degrees for 3 to 4 minutes.
Sauté vegetables in margarine and garlic powder. Add salt and pepper.
Add tomato sauce, water and paprika and bring to a boil. Simmer on medium heat
for 15 minutes.
Season alligator meat to taste and add (fried and drained) to vegetables, stir
and serve over rice
