Table of Contents: Southland Pecan Pie Monkey Bread Butter Rum Cake Snickers Salad ----------------------------------------------------------- Southland Pecan Pie 3 Eggs, beaten 1 Cup Sugar 1 Cup Karo Syrup 2 Tbs Butter 1 tsp Vanilla Extract 2 Cups Pecans (whole is best) 1 9-inch Prepared Pastry Pie Shell Combine sugar, syrup and butter in a sauce pan and bring to a boil; turn heat down to medium and simmer for 5 minutes. Remove from heat and cool syrup for 10 minutes. Slowly add beaten eggs, vanilla and pecans; mix well. Pour into shell and bake at 350 degrees for 50 minutes or until pecans are golden on top and inserted toothpick comes out clean. _______________________________________ Monkey Bread 4 (10 each) cans buttermilk biscuits 1 3/4 cup sugar 2 teaspoons cinnamon 1 cup pecans 1 cup raisins (optional) 4 1/2 sticks butter or margarine, melted Cut each biscuit into fourths. Roll each piece in cinnamon/sugar mixture. Layer in a bundt pan. Between each layer sprinkle sugar mixture, pecans, and raisins. Use entire sugar mixture. Pour melted butter or margarine over top. Bake at 350 for 45 minutes. Cool 5 minutes before turning out on plate. _______________________________________ BUTTER RUM CAKE 1/2 lb. margerine 1 3/4 cups sugar 5 eggs 1 tsp.vanilla 1 tsp.butter flavoring 2 cups sifted flour Cream margarine adding the sugar gradually. Add eggs one at a time mixing well after each. Add flavorings, add flour, 1/2 cup at a time, blending well. Pour batter into a greased and dusted 10 inch bundt pan. Bake for 1 hour or until done, at 325 degrees. Frost with the following: BUTTER RUM ICING 1/2 cup water 1 cup sugar 1 tsp. rum flavoring. Bring to aboil and cool. Add rum flavoring. Using pastry brush, apply icing to warm cake before slicing. Yield; 10 servings _______________________________________ SNICKERS SALAD 1 pkg instant vanilla pudding (small size, that uses 2 cups milk) 1 cup milk 8 oz frozen non-dairy whipped topping, thawed (Cool Whip) 4 good quality apples, washed, not peeled, cored, and chopped (I use 2 red, 2 green) 4 large Snickers candy bars, chopped 1 cup Spanish peanuts Mix the pudding mix with the milk until smooth and thick. Add in remaining ingredients.
