Squash Soup

Ingredients:
 1 medium sized butternut squash (peeled and cubed about 2.5 cups)
 1 medium onion, chopped
 4 cups of chicken bouillon
 1 tablespoon of fresh sage chopped finely
 1 teaspoon of thyme
2 tablespoons of butter
 Blue cheese (optional)
 Toasted pine nuts (optional)

Here's a wonderful recipe for squash soup! First, sauté the onions in the
butter for about 8 - 10 minutes on medium high until the onions are just
about soft. Then add the cubed squash and sauté the mixture for about 10
minutes, just until the squash starts turning color and softens up. Now add
the seasonings and sauté for 1 more minute. And finally, add the chicken
broth, bring the mixture to a boil, and then simmer for 20 minutes. After
the soup is cooked, place it in a blender and liquefy.

Then simply ladle the soup into a bowl; add some crumbled blue cheese and
toasted pine nuts to the top, and there you have it! It's a tasty soup to
help warm up those cold days.
