Impossible Pie

2 cups milk
1 cup coconut
1 cup caster sugar
125g [ 4 1/2 oz ] butter , melted
4 eggs, lightly beaten
1/2 cup plain flour, sifted
2 teaspoons vanilla
icing sugar [ Confectioners sugar ] for dusting and whipped cream, to serve.

Preheat oven to moderate, 180C.
Lightly grease a 23cm [ 9 inch ] round pie plate.
In a large bowl, using a wooden spoon, mix together all ingredients.
Pour into prepared pie plate.
Bake for 55-60 minutes until set.
Dust with icing sugar. Serve in wedges with whipped cream.
