Pumpkin Soup
125 bacon pieces, fat removed and finely chopped [ 4oz ]
1 tablespoon butter
1 clove garlic, crushed
2 medium onions, chopped
3 cups peeled, diced pumpkin
1 tablespoon tomato paste
dash Tabasco
2 1/2 cups chicken stock
bay leaf
salt and pepper to taste
1/2 cup cream
chopped chives.

Place bacon, butter, garlic and onions in a large casserole dish.
Cover with lid or plastic wrap and microwave on 100% power for 
4 minutes.
Add pumpkin, tomato paste, Tabasco, bay leaf, salt and pepper 
and 1 1/2 cups chicken stock.
Cover with lid or plastic wrap and microwave on 100% power for 6 minutes.
Stir and microwave a further 6 minutes on 100% power or until pumpkin is 
tender. Remove bay leaf. Add extra stock. Cool slightly.
Blend soup in a food processor or blender until smooth.
Reheat on 100% power for a few minutes.
Add cream, stir quickly and serve immediately.
Top with a few chopped chives to decorate.
