Cowboy Baked Beans & Sausage
8 oz smoked sausage links or frankfurters, sliced 1/2 in. thick 1 1/2 cups coarsely chopped onions 3/4 cup bottled barbecue sauce 2 Tbsp each pancake syrup and water 1 Tbsp cider vinegar 1 (15- to 16-oz) can each red kidney, pinto and black beans, rinsed Garnish: Sliced scallions 1. Heat a large skillet over medium-high heat. Add sausage; cook, turning slices once, 3 minutes or until browned. Remove to a bowl. 2. Add onions to drippings in skillet. Cover and cook 8 minutes, stirring occasionally, until tender and golden. 3. Add barbecue sauce, syrup, water and vinegar; bring to a boil. Stir in beans and sausage. Heat covered, over medium heat, 15 minutes, stirring often, for flavors to blend. Sprinkle with scallions if desired. Serves 7. [Non-text portions of this message have been removed]
