Bananas Flambe with Frozen Yogurt- Diabetic

4 small, ripe bananas, peeled
1tbsp margarine or butter
1 tbsp brown sugar
1/2 tsp ground cinnamon
1/2 to 1 tsp pure rum extract
2 c low-fat frozen yogurt

Cut bananas into slices. Melt margarine in skillet over medium
heat. Add banana slices, sugar, and cinnamon. Saute until bananas
are browned. 4 to 5 minutes. Remove from heat. Stir in rum
extract. Divide warm bananas and sauce equally among 4 dessert
dishes. Top each serving with 1/2 cup frozen yogurt.

Makes 4 Servings.
