Hot lemon pie

Ingredients
1 large lemon, cut in pieces, seeds removed but leave
the rind and peel intact
Scant 1 1/2 cup sugar
4 eggs
1 stick (1/4 cup) margarine
1 teaspoon vanilla
9 inch unbaked pie shell OR graham cracker crust

Directions
Preheat oven to 350 degrees. Put everything except pie shell 
into a blender or possibly a food processor. I use blender. Let 
it whirl like crazy for a little while. Mixture will be quite 
foamy. Keep it whirling till smooth and no lumps left in 
margarine. Pour into pie shell. Bake for abut 40 minutes. It 
will set up like custard.

Serve warm or at room temperature or even chilled. It can be 
served plain or with a little ball of fruit sorbet or sherbet or 
even a dollop of whipped cream.
