Actually we are updating the italian trasnation quite every day
updating the .pot locally directly from the WP SVN. So we do not think
it would take too much to get locale files ready in not more than 2
days after the officiale relaease of the final english version. I
suppose other translators are doing the same.
Unfortunately not all translators have the time to check regularly pot
updates and sync their translation. However if they are given some time
before the release they could push a little bit more and finish their
work on time.
Actually we didn't checked for unlolazed strings yet, but we are doing
it in the next days

The new importers need to be checked. The Textpattern importer
definitely needs some gettext. Patches welcome.
Strings are effectively frozen. If any strings are changed between now
and the 2.0 release, I'll try to post those updates to the i18n list.
Ops, I read this just after I put the importers' and plugins' string
into the pot file, because they were still out of reach of the
wp-gettext script. When saying that strings were effectively frozen did
you include the importers' and plugins' strings in the count or not?
